Ingredients:
- 2 cups - Dry Pinto Beans rinsed
- 6 cups - water
- 1/2 whole - Red Pepper chopped
- 1/2 whole - Onion chopped
- 1/2 cups - Celery chopped
- 1 1/4 tablespoons - Southwest Seasoning
- 1 teaspoons - Honey Siracha Seasoning optional
- 6 cups - Chicken Broth
- 1 cups - Tomato Sauce with Jalepenos2
- 2 cups - Ham cubed
Directions:
Rinse dry pinto beans & place in a pressure cooker with 6 cups of water and 1 Tablespoon of oil.
Set the cooker to Beans setting and chose 1 hour setting.
Drain beans and set aside.
Fry vegetables in bacon fat & add to the cooker.
Pour chicken stock in the cooker along with the seasonings, 2 cups of beans & tomato sauce.
Place chopped ham in the cooker and stir well.
Set the cooker on Soup setting (30 minutes).
To make soup thicker, take ladles full of soup into a blender. Blend until smooth.
Stir blended mixture into soup.
