Ingredients:
- 2 cans - coconut milk
- 1/2 jars - small jar curry paste (red, green or yellow) or 1 full jar, as desired for taste
- - juice of 1-2 limes
- 2 tablespoons - fish sauce
- - shrimp, scallops, or chicken
- - pork, beef or lamb
- - hard boiled eggs
- - broccoli, green peppers, or snow peas
- - sugar snap peas or cauliflower
- - spinach, chard, or onion
- - green beans
- - red peppers or pineapple
- - eggplant, mushrooms, or onion
- - zucchini or sweet potato
- - sweet potato, onion, or cabbage
- - yellow peppers, orange peppers, or carrots
- - pineapple, cauliflower or mushrooms
- - basil, cilantro, or scallions
- - almonds, cashews, or raisins
Directions:
This Whole9 special bonus dinner helps you make an unlimited number of delicious meals.
In a medium bowl, mix together the ingredients for the Curry Base and set aside.
Thoroughly cook your protein of choice in the cooking fat of your choice in a skillet; set aside.
Chop the veggies you have on hand (from the options above) and add to the curry base, cooking in a skillet until the veggies are tender. Add the meat and simmer for 3-5 minutes.
Add salt and pepper (and other desired spices) to taste. Top and serve!
