Curried Rice

Ingredients:

  1. 1/4 cups - Chopped onion
  2. 1/4 cups - Thinly sliced celery
  3. 2 1/2 teaspoons - Curry powder
  4. 2 tablespoons - Butter or margarine
  5. 1 cups - Long grain rice
  6. 2 cups - Water
  7. 1/4 cups - Raisins
  8. 2 teaspoons - Instant beef bouillon granules
  9. 1/4 teaspoons - Salt
  10. 1/2 cups - Coarsely chopped cashews

Directions:

In a 2-quart saucepan cook onion, celery, and curry powder in butter or margarine till celery is tender but not brown. Add rice. Stir in water, raisins, bouillon granules, and salt. Cover pan and bring to boiling. Reduce heat; cover and simmer 15 minutes or till rice is done. Let stand, covered, for 10 minutes. Just before serving, stir in the chopped cashews and toss lightly to mix.
