Curried Crab Cakes

Ingredients:

  1. 2 - Eggs
  2. 1/2 cups - Mayo or Salad dressing
  3. 1 tablespoons - Curry Powder
  4. 1 tablespoons - Worcestershire Sauce
  5. 1 teaspoons - Whole Grain Mustard
  6. 3/4 cups - Panko Bread Crumbs
  7. 1/2 cups - Red or Green Pepper Chopped
  8. 1/4 cups - Red Onion Chopped
  9. 2 - Green Onions sliced
  10. 2 tablespoons - Fresh Parsley chopped
  11. 1 pounds - Jumbo Lump Crab
  12. 2 tablespoons - Cooking Oil

Directions:

In a bowl, beat eggs. Stir in Mayo, curry, Worcestershire, and mustard. Stir in bread crumbs, peppers, red onion, green onion, and parsley. Form into 12 portions. In a large skillet heat oil over med-high heat. Add half the crab cakes and brown on each side. Put on paper towels to drain and cook the second round. Can be served with mango chutney. I like them plain!
