Crustless Spinach Quiche

  1. 1 tablespoons - coconut oil
  2. 1 - onion chopped
  3. 1 packages - frozen chopped spinach thawed, drained
  4. 8 - eggs beaten
  5. 3 cups - shredded raw cheese
  6. 1/4 teaspoons - sea salt
  7. 1/8 teaspoons - black pepper


Preheat oven to 350 degrees F and grease a 9-inch pie plate with coconut oil.

Heat coconut oil and onions in a saucepan over medium heat until onions are tender; stir in spinach and cook until excess moisture has evaporated.

Meanwhile, in a bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and mix well.

Scoop into prepared pie plate and bake for 30 minutes in preheated oven.
