Crustless Quiche

Ingredients:

  1. 1 cans - coconut milk
  2. 1 cups - organic mozzarella cheese, grated
  3. 1/2 cups - organic cottage cheese
  4. 1 whole - egg plus 4 egg whites
  5. 1 1/2 teaspoons - dry mustard
  6. 1/8 teaspoons - pepper
  7. 2 1/2 cups - packed fresh torn organic spinach
  8. 1 tablespoons - Parmesan cheese
  9. - Nutmeg, sprinkled on top

Directions:

Preheat oven to 350 degrees.  Arrange spinach and mozzarella cheese in a 9″ or 10″ pie pan, sprayed with grapeseed oil. 

Beat whole egg and egg whites together in a small bowl.  Set aside. 

Heat the milk until very warm, add cottage cheese, dry mustard, egg mixture and pepper; mix well and pour slowly over the spinach and mozzarella cheese.  Sprinkle with nutmeg and Parmesan cheese. 

Bake for 35-40 minutes or until knife comes out clean.  A good quiche will be slightly runny.
