Ingredients:
- 1 cups - all-purpose or whole wheat flour
- 1 - eggs 2 eggs to increase richness
- 1/2 cups - milk
- 1/2 cups - water
- 1 tablespoons - granulated sugar
- 1 teaspoons - olive oil

Directions:
Step 1
In a large mixing bowl, whisk together the flour, sugar, and eggs. Gradually add in the milk followed by water, stirring to combine. Beat until smooth. Taste batter to determine sweetness level and add sugar if desired.
Caution: Pouring in all the milk and water at once will make the batter watery and cause flour air bubbles.
Step 2
Pour in 1/2 teaspoon of olive oil into frying pan. Heat a lightly oiled frying pan over medium high heat and swirl to cover entire bottom of pan with oil. Using a ladle, pour the batter onto the pan. Tilt the pan with a circular motion so that the batter coats the surface evenly.
Step 3
Cook the crêpe until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot with your choice of Nutella, peanut butter, avocado, strawberry, or any favorite topping.
