Notes:
You can store left overs if there are any for up to a week in an airtight glass container. These can be reheated on stove over low heat or eaten cold. Substitute quinoa for millet or spinach for kale if you like.

Ingredients:
- 2 tablespoons - Lemon Juice
- 1 cloves - garlic
- 1 cups - water
- 2 tablespoons - Olive or Avacodo oil
- 1 teaspoons - Sea Salt
- 1/2 cups - cashews soaked and drained
- 1/2 cups - Millet
- - dash of sea salt
- 1 1/2 cups - water
- 6 cups - Kale Remove large stems and slice in strips or chop

Directions:
Bring millet, dash of salt and1.5 cups of water to a boil. Reduce heat and simmer covered for 20 minutes or till all water is absorbed. Prepare kale and place in large bowl. Blend all sauce ingredients together till smooth. Transfer to a small sauce pan and cook while stirring till thickened - about 3-5 minutes. Fluff millet with a fork, pour warm sauce over kale and add warm millet. Mix well and serve.
