For an even quicker meal, use any leftover chicken, rotisserie chicken or cooked chicken you have on hand. Feel free to use your favorite pasta of choice, instead of penne. We love this with homemade Alfredo sauce, but store-bought works, too. I used gluten-free pasta which didn't cook as well as it should have. Next time, I will cook pasta separately, eliminate the boiling water, and mix together before baking for less time.

Ingredients:
- 2 tablespoons - butter
- 1 cloves - garlic, minced
- 1 pounds - boneless, skinless chicken breast cut into cubes
- 1 teaspoons - oregano
- 1 teaspoons - Italian seasoning
- 1/2 teaspoons - salt, or to taste
- 1/4 teaspoons - black pepper
- 1/4 cups - sun-dried tomatoes, drained and chopped
- 3 cups - baby spinach
- 8 ounces - penne pasta, uncooked
- 1 jars - Alfredo sauce, 15 oz.
- 2 cups - boiling water
- 1 1/2 cups - mozzarella cheese
- - basil or parsley, optional for garnish
Directions:
Preheat your oven to 400°F. In a medium bowl, combine the chicken, garlic, Italian seasonings, oregano, salt and pepper. Toss well to combine.
In a deep skillet that is oven-proof, melt butter; then add chicken and cook for 7-8 minutes until cooked all the way through.
Turn skillet heat off and add all the other ingredients except for the mozzarella cheese; mix together well.
Cover the pan and place in preheated oven to cook for 30 minutes or until pasta is cooked through.
Remove dish from the oven, remove the lid and sprinkle mozzarella cheese on top of pasta.
Bake for another 5-10 minutes or until the cheese melts and is bubbly.
