    * cashew cream from 1/2 cup soaked cashews blended in 2/3 cup water can be substituted for the yogurt. This will make the salad a bit sweeter whereas the yogurt (my preference) will be a little tangier.

Ingredients:

  1. 2 pounds - Broccoli Cut in bite sized pieces
  2. 3 tablespoons - Lemon Juice
  3. 2 tablespoons - Mayonnaise
  4. 2/3 cups - * plant based Yogurt
  5. 1/2 teaspoons - Sea Salt
  6. 1/2 teaspoons - Tarragon Dried/Crushed
  7. 1 bunches - Green Onions Sliced
  8. 1/4 teaspoons - Black Pepper

Directions:

Lightly steam broccoli then rinse in cold water and drain. Combine all other ingredients and pour over drained broccoli. Mix and chill for 3 hours or longer, stir again before serving.
