Cream of Broccoli Soup

Ingredients:

  1. 4 cups - chopped broccoli OR 2 pkgs 10 oz. frozen broccoli thawed
  2. 1/2 cups - chopped onion
  3. 3 cups - water
  4. 6 - chicken bouillon cubes
  5. 1/2 teaspoons - thyme leaves
  6. 1/8 teaspoons - garlic powder
  7. 1/4 cups - butter or margarine
  8. 1/4 cups - unsifted flour
  9. 1/8 teaspoons - pepper
  10. 2 cups - milk

  12. 1/2 cups - chopped onion
  13. 3 cups - water
  14. 6 - chicken bouillon cubes
  15. 1/2 teaspoons - thyme leaves
  16. 1/8 teaspoons - garlic powder
  17. 1/4 cups - butter or margarine
  18. 1/4 cups - unsifted flour
  19. 1/8 teaspoons - pepper
  20. 2 cups - milk

Directions:

Combine broccoli, onion, water and bouillon (or chicken broth), thyme and garlic powder. Bring to a boil; reduce heat and simmer, covered, 15 minutes or until broccoli is tender.

In a medium saucepan, melt margarine; stir in flour and pepper until smooth. Stir in milk or cream, cook and stir until thickened.

Add to broccoli mixture; heat through (do not boil).
