Ingredients:
- 3/4 sticks - butter
- 2 - large onions chopped
- 2 stalks - celery chopped
- 1 - medium bell pepper chopped
- - garlic
- - salt and pepper
- - red pepper
- 1 1/2 pounds - crawfish tails 1-2 lbs, as desired
- 4 tablespoons - flour
- 2 cups - water
- 4 cubes - chicken bouillon
- - green onion tops
- - parsley
- - cooked rice for serving
Directions:
Melt butter in heavy pan. Sauté vegetables in butter for 10 minutes.
Add garlic, salt, red and black pepper. Add crawfish tails, and sauté for 1 minute.
Add flour; stir. Cook 3 minutes.
Add water, bouillon, green onion and parsley. Simmer 15 minutes.
Serve over rice.
