Notes:
When ready, strain through sieve to remove solids and put in clear, completely clean glass bottles. I sanitize the bottles with boiling water and let cool before putting cordial in. The filled bottles are gorgeous with the red cranberry cordial.

Ingredients:
- 1 packages - (12 oz) fresh cranberries (3.5 - 4 cups)
- 2 cups - sugar, plus more as needed
- 1 1/2 tablespoons - grated fresh orange rind or dried tangerine peel from 1 tangerine
- 4 - whole cloves
- 4 - allspice berries
- 4 cups - vodka
Directions:
1. Pick over cranberries; rinse and drain. If using a food processor, place half the berries, half the sugar, and half the orange rind in container. Cover; whirl until coarsely chopped. Repeat with remaining berries, sugar, and rind. Or, chop berries and rind by hand. Mix with sugar in a large bowl.
2. Place mixture in large jar or crock with tight-fitting lid. Or, divide between two 1-quart canning jars. Bruise cloves and allspice berries slightly with mortar and pestle, with flat side of knife or bottom of a small, heavy skillet. Drop into jar(s). Stir in vodka. Cap jar tightly.
3. Let mixture stand at room temperature for 1 month. Shake or stir the mixture at least once a week.
