Cran-Orange Swiss Chard

Ingredients:

  1. 1 - Medium onion
  2. 1 tablespoons - Vegetable oil
  3. 2 pounds - Swiss chard
  4. 1/4 cups - Orange juice
  5. 1/4 cups - Dried cranberries
  6. 1/4 cups - Mandarin oranges Drained
  7. - Salt and pepper to taste

Directions:

Wash your hands and clean your cooking area. Wash and chop Swiss chard. Peel and chop onion. Heat 1 tablespoon vegetable oil in large skillet over medium heat. Sauté onion until tender. Add Swiss chard and sauté for 3-5 minutes or until just wilted. Stir in the orange juice and salt and pepper; cook for 1-3 minutes. Remove from heat. Stir in mandarin oranges and cranberries.
