Citrus-Raspberry Salad

Ingredients:

  1. 1/2 cups - raspberries
  2. 3 tablespoons - lemon juice
  3. 1/3 cups - olive oil
  4. 1 tablespoons - honey
  5. 1 bags - (5 oz) spring mix greens
  6. 1/2 cups - raspberries

Directions:

In bowl of food processor, puree raspberries and lemon juice. Strain through sieve; discard seeds. In bowl, whisk together raspberry mixture, olive oil, and honey. Season with salt and pepper, if desired. On serving platter, arrange greens. Drizzle with dressing. top with remaining raspberries.
