Cinnamon roasted almonds

Ingredients:

  1. 2 - Egg whites
  2. 6 teaspoons - vanilla
  3. 4 cups - Almonds
  4. 2/3 cup - Sugar
  5. 2/3 cup - Brown sugar
  6. 1 teaspoon - Salt
  7. 4 Tablespoons - Ground Cinnamon
  8. 2 - Egg whites
  9. 6 teaspoons - vanilla
  10. 4 cups - Almonds
  11. 2/3 cup - Sugar
  12. 2/3 cup - Brown sugar
  13. 1 teaspoon - Salt
  14. 4 Tablespoons - Ground Cinnamon

Directions:

Preheat oven to 300*
In large bowl whip egg whites till frothy. Add vanilla and mix well. Add almonds and mix well. Add rest of ingredients and mix well.
Tip: Use old baking sheets. Even after a good cleaning everything made on them will taste like cinnamon.
Spray baking sheet with Pam. Spread out 1/2 of the almonds on sheet and cook for 15 min. Take out of oven and push all almonds to one side. Spray Pam on empty side of pan and repeat with other side as you mix the almonds up. Bake for another 15 min.
Immediately transfer almonds to tinfoil to cool. Bake other 1/2 of almonds using the same steps and immediately wash the baking sheet.
