Ingredients:
- 6 - boneless skinless chicken breasts
- 1 cups - chopped celery
- 1 - small white onion finely diced
- 1 bunches - green seedless grapes (whole)
- 1 cups - whole cashew nuts
- 1 cups - mayonnaise or more or less, to taste
- - salt and pepper
- - lettuce leaves, melon wedges, pineapple wedges optional, for serving with
Directions:
Boil chicken breasts in salted water until tender; cool completely.
Cut chicken into cubes, once cooled.
Add chopped celery, diced onion, whole green grapes and cashews; season generously with salt and pepper.
Fold mayonnaise thoroughly into the cooled chicken salad mixture.
Serve on a lettuce leaf, a pineapple wedge or a melon wedge. Garnish with additional whole cashew nuts.
