Chorizo and Kale Soup

Ingredients:

  1. - olive oil
  2. - medium onion chopped
  3. - potatoes cued
  4. - garlic cloves minced
  5. - kale cleaned, ribboned
  6. - chorizo
  7. 1 cans - chickpeas with juice
  8. 1 cans - small can diced tomatoes
  9. 1 quarts - chicken stock

Directions:

In soup pot, heat olive oil over medium heat. Cook onion and cubed potatoes.

Clean and ribbon the kale, put into pot and cover.

While steaming, remove chorizo casing, slice down center and chop.

Stir kale, when kale wilts. Stir and add in chorizo, garlic, chickpeas, tomatoes, and chicken stock.

Cover and cook.
