Chocolate Truffles

Ingredients:

  1. 1 1/2 pounds - quality chocolate
  2. 1/3 cups - 35% cream
  3. 1/3 cups - half & half cream
  4. 1/2 teaspoons - vanilla
  5. 1/4 cups - cocoa
  6. 1 tablespoons - cinnamon
  7. 1 1/2 pounds - quality chocolate
  8. 1/3 cups - 35% cream
  9. 1/3 cups - half & half cream
  10. 1/2 teaspoons - vanilla
  11. 1/4 cups - cocoa
  12. 1 tablespoons - cinnamon

Directions:

1. Melt chocolate in double boiler over hot - not boiling - water.
2. When melted, beat smooth.
3. Combine creams and heat until scalding, then cool to 130°F.
4. Add warm cream to chocolate and let stand until 130°F. Then beat until smooth and well blended.
5. Add vanilla when cool and beat until candy is almost fluffy.
6. Cool down in fridge until firm. Shape into balls with hands and roll into Truffle Rust.
