Brief Description
Rich, tomatoey chili with lots of meat and a little bit of beans. Makes about 6 quarts. Serve with shredded cheddar cheese, sweet onion, guacamole, sour cream.

Notes:
Use approximately 3# of meat, any combination of: Ground Beef, Stew Meat, Sweet or Hot Italian Sausage, Cubed Leftover Pork, Andouille Sausage. Can be cooked in Slow Cooker, 4-6 hours.

Ingredients:
- 3 pounds - Meat, see note cut to bite size
- 1 1/2 cups - Yellow onion chopped
- 1 - Green bell pepper chopped
- 1/2 - Jalepeno finely chopped
- 1 cans - Kidney beans, 15 ounces, low sodium rinsed, drained
- 1 cans - Black beans,15 ounces, low sodium rinsed, drained
- - Canned Chipotles to taste, approx 1T
- 12 ounces - beer
- 3 cans - Diced tomatoes, w or w/o mild chilis
- 1 tablespoons - Cumin
- 2 teaspoons - Oregano, Mexican if available
- 3 cloves - garlic
- - Salt & Pepper to taste

Directions:
Brown sausage in skillet, remove to Instant Pot, reserving grease in pan.
Brown stew meat in skillet, remove to Instant Pot, reserving grease in pan.
Saute onion, green pepper and jalapeño in skillet, remove all to Instant Pot.
Stir in remaining ingredients to Instant Pot.
Pressure cook for 30 minutes, turn pot off and let sit for 15 minutes. Release steam.
Taste and season as needed.
Put lid back on Instant Pot and set for 0 minutes, then allow to stay on Keep Warm or Slow Cooker Low for 2 hours or more until ready to serve.
