Chicken Rice Soup

Ingredients:

  1. 1 tablespoons - Oil
  2. 1 pounds - Chicken Breast Boneless & Skinless
  3. 1 cups - Onion Chopped
  4. 8 cups - Chicken Stock
  5. 1/2 teaspoons - Garlic Minced
  6. 1/4 teaspoons - Thyme Leaves
  7. 2 - Bay Leaves
  8. 1/2 cups - Carrots Sliced
  9. 1/2 cups - Celery Sliced
  10. 1 packages - Yellow Rice Zatarains/Uncle Ben/Etc
  11. 1 tablespoons - Oil
  12. 1 pounds - Chicken Breast Boneless & Skinless
  13. 1 cups - Onion Chopped
  14. 8 cups - Chicken Stock
  15. 1/2 teaspoons - Garlic Minced
  16. 1/4 teaspoons - Thyme Leaves
  17. 2 - Bay Leaves
  18. 1/2 cups - Carrots Sliced
  19. 1/2 cups - Celery Sliced
  20. 1 packages - Yellow Rice Zatarains/Uncle Ben/Etc

Directions:

Heat oil in a large pot on medium high heat. Add chicken; cook 3 minutes per side until lightly browned. Remove chicken; set aside.

Add onion to pan; cook and stir 3 minutes or until softened. Add chicken stock, garlic, thyme, and bay leaves. Bring to a boil. Add carrot, celery, rice mix and chicken. Reduce heat to low; simmer 10 minutes or until chicken is cooked through. remove chicken, set aside to cool.

Cover and simmer soup an additional 20 minutes or until rice and vegetables are tender. Shred chicken and add to soup. Remove bay leaves before serving.
