    Additional broth or chicken bouillon may be added to taste if necessary. This recipe freezes well. Portion into individual or larger containers.

Ingredients:

  1. 1 1/2 pounds - Chicken breast
  2. 4 stalks - Celery chopped
  3. 1 - Large white onion diced
  4. 1/2 cups - Fresh parsley chopped
  5. 1 packages - Frozen egg noodles
  6. 64 ounces - Chicken broth (2 32oz cartons)
  7. 1 cups - Matchstick carrots
  8. - Salt to taste
  9. - Pepper to taste

Directions:

1. Place chicken, onion and celery in a large pot.
2. Add 1 container chicken broth and additional water, if needed, to cover contents.
3. Heat to a boil, then reduce heat slightly and simmer until chicken is cooked through, about 10 minutes.
4. Remove chicken and add chicken broth, carrots and egg noodles. Maintain at a simmer. Meanwhile, shred chicken with 2 forks.
5. When noodles are cooked, add chicken back to pot, along with parsley and salt and pepper to taste. Serve and enjoy.
