You can substitute the onions and garlic for shallots or leeks if you like and white wine can be substituted for the Mirin as well. This is also delicious served over whole grain pasta or slices of toasted whole grain baguette.

Ingredients:
- 2 tablespoons - Butter
- 1 - Onion - large chopped
- 4 cloves - Garlic chopped
- 2 ribs - Celery sliced
- 1/2 teaspoons - Thyme
- 1/4 cups - Mirin rice cooking wine
- 3/4 pounds - Chicken Livers cleaned and cut to bite size pieces
- 1/2 cups - Chicken Stock (can substitute water)
- 1/4 teaspoons - Sea Salt
- 1/2 teaspoons - Black Pepper
- 1/2 cups - Parsley - chopped
Directions:
Saute the onions, garlic and butter over medium-low heat adding thyme once some juices have released then cook until onions are translucent. Add mirin, chicken liver pieces, and stock. Season with sea salt and black pepper. Cook until most of the liquid evaporates stirring chopped parsley in just before serving over your choice of cooked whole grains.
