Chicken Cucumber Namasu

Ingredients:

  1. 2 pounds - chicken - Costco shredded
  2. 5 pieces - cucumber sliced - 1/4" thick
  3. 1/2 cups - sugar
  4. 1/2 cups - rice vinegar
  5. 1/2 cups - soy sauce
  6. 1/4 cups - sesame oil
  7. 2 tablespoons - roasted sesame seeds
  8. 4 stalks - green onion chopped
  9. 2 cloves - garlic grated
  10. 1 tablespoons - Hondashi
  11. - chili pepper to taste

Directions:

Combine all sauce ingredients - excluding chicken & cucumbers. Pour over chicken and cucumber. Mix and refrigerate.
