Chicken and Dumpling Soup

Ingredients:

  1. 2 tablespoons - Olive Oil
  2. 2 tablespoons - Butter
  3. 1 pounds - Boneless Chicken Breast Cut into bite size pieces
  4. 1 whole - Yellow Onion Chopped
  5. 1 teaspoons - Salt
  6. 1 teaspoons - Dried Parsley Leaves
  7. 1/2 teaspoons - Dried Thyme Leaves
  8. 1/4 teaspoons - Pepper
  9. 3 whole - Garlic Cloves Minced
  10. 2 tablespoons - Flour
  11. 4 3/4 cups - Chicken Broth May be less if you don't use for the dumpling mix
  12. 1 cups - Whole Milk
  13. 1 1/2 cups - Frozen Peas and Carrots
  14. 1 boxes - Red Lobster Cheddar Bay Biscuits
  15. 1/2 cups - Shredded Cheddar Cheese
  16. 3/4 cups - Water May be substituted with chicken broth

Directions:

1. Start by adding 2 tablespoons of olive oil and 2 tablespoons of butter to a large pot.
2. Add 1 pound of boneless, skinless chicken breast that's been cut into bite-size pieces and a chopped yellow onion.
3. Stir until everything is coated in the oil.
4. Add 1 teaspoon of salt, 1 teaspoon of dried parsley leaves, 1/2 teaspoon of dried thyme leaves, and 1/4 teaspoon of pepper.
5. Cook until the chicken is no longer pink, then add 3 minced garlic cloves and 2 tablespoons of flour.
6. Let this cook for a minute while stirring.
7. Add 1 cup of chicken broth and stir until smooth.
8. Then add another 3 cups of chicken broth, 1 cup of whole milk, and 1 1/2 cups of frozen peas and carrots.
9. Let the liquid come to a simmer and in the meantime make the dumplings.
10. Add the biscuit mix to a mixing bowl with 3/4 cup of water (or chicken broth), 1/2 cup of shredded cheddar cheese, and the Cheddar Bay flavor packet.
11. Mix it together, then drop spoonfuls of the batter into the simmering liquid. Spoons would work, but I like to use a cookie scoop for this. Try to drop the batter so that the dumplings are not touching. Do not stir at this point.
12. Cover the dumplings and let them cook for 12 minutes.
13. After they've cooked, gently break apart the dumplings then stir well, making sure all of the dumplings are coated in the liquid.
