Ingredients:

  1. 1 cups - Butter room temp
  2. 3/4 cups - Sugar
  3. 2 - Eggs
  4. 1 cups - Boiled carrots mashed then cooled
  5. 2 cups - Flour
  6. 2 teaspoons - Baking Powder
  7. 1/2 teaspoons - Salt
  8. 1 cups - Powdered Sugar
  9. 1/2 teaspoons - Vanilla Extract
  10. 1/4 teaspoons - Salt
  11. 1 1/2 tablespoons - Milk
  12. 1/2 teaspoons - Salt
  13. 1 cups - Powdered Sugar
  14. 1/2 teaspoons - Vanilla Extract
  15. 1/4 teaspoons - Salt
  16. 1 1/2 tablespoons - Milk
  17. 1 cups - Butter room temp
  18. 3/4 cups - Sugar
  19. 2 - Eggs
  20. 1 cups - Boiled carrots mashed then cooled
  21. 2 cups - Flour
  22. 2 teaspoons - Baking Powder

Directions:

Beat butter, sugar, and eggs until fluffy. Beat in cooled mashed carrots. Blend together flour, baking powder, and salt. Beat/mix into butter mixture.
Refrigerate at least two hours. Drop by teaspoonful onto lightly greased baking sheets. Bake at 400° for 8-10 minutes until no imprint remains when lightly touched. They are slightly golden at this point.
While in the oven, mix frosting with a spoon until smooth and of light consistency.
While slightly warm, frost with frosting.
