Caramel Ice Cream Pie with Caramel Sauce

Ingredients:

  1. 1 - egg white
  2. 1/4 teaspoons - salt
  3. 1/4 cups - sugar
  4. 1 cups - finely chopped walnuts
  5. - butter
  6. - French Vanilla ice cream or frozen yogurt (or your flavor of choice)
  7. 2 tablespoons - butter
  8. 1/2 cups - brown sugar
  9. 1/4 cups - light cream
  10. - walnuts

Directions:

Beat egg white with salt until stiff but not dry. Beat in sugar, 1 tablespoon at a time, until stiff. Gently fold in chopped walnuts.

Generously butter an 8-inch pie plate and spread mixture evenly slightly over the rim with wet spoon. Bake at 400 degrees F until golden (8-10 minutes) and let cool.

Fill with ice cream, top with caramel sauce (below) and serve.

Caramel Sauce:
Melt butter and mix with brown sugar; heat until smooth and slowly stir in cream. Pour over pie and sprinkle with walnuts.
