Notes:
I have used balsamic vinegar in place of red wine vinegar, still with terrific flavor. Also used grape tomatoes instead of dicing whole tomatoes and have substituted fresh spinach for fresh basil. The chicken is delicious whether you choose to serve it with pasta or some other side. Make it dairy-free by eliminating the mozzarella.

Ingredients:
- 2 tablespoons - red wine vinegar
- 1 cloves - garlic chopped
- 1 teaspoons - dry mustard or Dijon mustard
- 1 teaspoons - fresh mint chopped
- 1/2 teaspoons - salt
- 1/4 teaspoons - black pepper
- 3 tablespoons - olive oil
- 3 - tomatoes seeded, cut into bite-size pieces
- 1/4 cups - fresh basil torn into small pieces
- 3 tablespoons - dressing marinade, above
- 4 - chicken breasts boneless, skinless
- 3 ounces - mozzarella cheese shredded
- 3 ounces - whole wheat angel hair pasta cooked
Directions:
In a small dish, whisk together vinegar, garlic, mustard, mint, 1/4 teaspoon of salt and 1/8 teaspoon of black pepper. Gradually drizzle in olive oil, whisking constantly, so mixture emulsifies.
Combine tomatoes, basil, and 3 tablespoons of dressing in a medium bowl; cover and set aside.
Heat gas grill to medium-high heat and lightly coat rack with oil or nonstick cooking spray. Brush chicken with remaining dressing and season with remaining 1/4 teaspoon salt and 1/8 teaspoon pepper. Grill 5-6 minutes per side or until internal temperature reaches 160 degrees fahrenheit. Sprinkle cheese over top duringl ast minute of cooking.
Toss cooked pasta with half of tomato salad. Serve with chicken and remaining tomato salad.
