We have tried the low-fat Velveeta and it does not work very well. It turned out a little watery - not good. :/ My kids love this and everyone always asks for the recipe. No one knows it has cabbage in it because it cooks down. It just seems like a variation of potato soup! Give it a try - you won't be sorry. :)

Ingredients:
- 1 heads - Cabbage finely shredded
- 2 pounds - Potatoes or more - as desired
- 3 tablespoons - Butter Buds
- 1 cups - Hot Water
- - Carrots as desired
- - Celery as desired
- 1 - Large Onion diced
- 1 packages - Sm. Mexican Velveeta cubed
- - Salt As desired
- - Pepper As desired
Directions:
Dissolve Butter Buds in 1 cup hot water. Add to soup pot and add another 7 cups of water. Shred cabbage, dice potatoes, chop celery, carrots and onions - then add all to soup pot. Salt and pepper as desired. Bring to a boil and then turn down low for 1 hr. Add Velveeta just before serving - be careful to not scorch the cheese once it is melted in the soup (very easy to do). : )
