Brief Description
This makes a very light, very fresh pasta sauce. This is my favorite way to make pasta or gnocchi. The trick is that small tomatoes, if left to cook in a covered dish, will heat up and burst, releasing their juice. No need for any cutting!

Ingredients:

- 1 - onion
- 2 cloves - garlic
- - cooking oil
- - your favorite pasta sauce veggies (I like zucchini and mushrooms)
- - your favorite Italian seasonings
- - your favorite pasta or gnocchi, cooked
- - optional: sausage
- - parmesan cheese or nutritional yeast + garlic salt topping

Directions:
1. Add cooking oil to a skillet or pan with a cover.
2. Chop the onions. Sauté until about halfway to desired doneness. (If you like spicier onions, add these later with the tomatoes.)
3. Add minced garlic and sauté until you start to smell the garlic.
4. Add any extra veggies and cook about halfway done.
5. Wash you tomatoes and dump them in the pan without cutting. Add Italian spices. Turn down the heat to simmer and cover pan.
6. In 10-20 minutes, the tomatoes will start bursting and releasing their juice. At this point, your sauce is done! Add your pasta or gnocchi to the pan and mix. Top with parmesan cheese or nutritional yeast mix and enjoy!
