Broccoli Cheese Soup

Ingredients:

  1. 4 cups - broccoli
  2. 1/2 cups - onion chopped
  3. 2 cans - chicken broth (4 cups)
  4. 1/8 teaspoons - garlic powder
  5. 1/2 cups - butter
  6. 1/2 cups - flour
  7. 1/8 teaspoons - pepper
  8. 2 cups - light cream or half & half or 1 cup each milk & heavy cream
  9. 8 ounces - cheddar cheese grated
  10. 4 cups - broccoli

  13. 1/8 teaspoons - garlic powder
  14. 1/2 cups - butter
  15. 1/2 cups - flour
  16. 1/8 teaspoons - pepper
  17. 2 cups - light cream or half & half or 1 cup each milk & heavy cream
  18. 8 ounces - cheddar cheese grated

Directions:

Combine chicken broth, onion, broccoli and garlic powder in a large saucepan. Bring to a boil, reduce heat and simmer covered for about 15 minutes or until tender. Using a blender (if you have a hand blender, it is a lot easier to do in the pot), puree 1/3 of the mixture at a time until smooth. Set aside.

In a medium saucepan, melt the butter, stir in flour and pepper blending until smooth using a wire whisk. Add cream/milk gradually. Cook, whisking constantly, until thickened. Add to broccoli mixture. Add cheese and heat through, but do not boil.
