Broccoli Bleu Cheese Soup

Ingredients:

  1. 2 cups - broccoli uncooked, fresh or froze, finely chopped
  2. 1 - small onion finely chopped
  3. 3 cups - chicken broth
  4. 1 cups - vegetable broth
  5. 2 cups - milk or cream
  6. 3 ounces - Bleu cheese crumbled
  7. 1/8 teaspoons - paprika for garnish, or
  8. 1 teaspoons - fresh parsley chopped, for garnish
  9. - salt and pepper to taste
  10. - seasoned salt optional
  11. 2 cups - broccoli uncooked, fresh or froze, finely chopped

  17. 1/8 teaspoons - paprika for garnish, or
  18. 1 teaspoons - fresh parsley chopped, for garnish
  19. - salt and pepper to taste
  20. - seasoned salt optional

Directions:

In a 3-quart stock pot, cook broccoli and onion in chicken and vegetable broth, until very tender. Add milk, simmer; do not boil. Season with salt, pepper and seasoned salt. Add cheese just before serving, stir to melt. Top with paprika or parsley. Serve hot.
