Ingredients:
- 4 cloves - garlic crushed
- 12 - peppercorns in cheesecloth bag
- 10 cups - water
- 2 1/2 pounds - boneless pork cubed
- 1 - sliced onion
- 2 - bay leaves
- 3 tablespoons - olive oil
- 1 - onion minced
- 1 - large red bell pepper diced
- 1 - large green bell pepper diced
- 3 cloves - garlic minced
- 1 - jalapeno pepper minced
- 1/2 teaspoons - cumin seeds
- 1 cups - chopped tomatoes and juice
- 1/2 cups - chopped fresh cilantro
- 1 tablespoons - chopped fresh oregano
- 1 cans - 29 oz. hominy drained
- 8 ounces - chorizo casings removed, crumbled
Directions:
Place the crushed garlic, cheesecloth bag of peppercorns, water, cubed pork, sliced onion and bay leaves in a large pot and simmer for 1 hour.
Meanwhile, saute bell peppers, minced garlic, and jalapeno in olive oil. Add to pork mixture.
Add cumin, tomatoes, cilantro, oregano, hominy, and chorizo, and simmer for 45 minutes.
Salt and pepper to taste. Garnish with fresh cilantro.
