Bonefish Chickpeas or Garbanzo Beans

Ingredients:

  1. 1 cans - 15-19 oz. chickpeas drained
  2. 1 - small onion finely chopped
  3. 1 - tomato diced
  4. 1 tablespoons - basil fresh or dry
  5. 1 bunches - spinach about a handful
  6. 2 tablespoons - olive oil plus more (or water), to moisten
  7. - salt and pepper

Directions:

Saute all ingredients (except spinach) for about 25 minutes (or a little longer until some of beans start to mush).

Add spinach and cook another 5 minutes.

To make this a quick and easy main dish, saute some sausage with the onions until no longer pink before adding chickpeas.
