Ingredients:
- 1 cans - 15-19 oz. chickpeas drained
- 1 - small onion finely chopped
- 1 - tomato diced
- 1 tablespoons - basil fresh or dry
- 1 bunches - spinach about a handful
- 2 tablespoons - olive oil plus more (or water), to moisten
- - salt and pepper
Directions:
Saute all ingredients (except spinach) for about 25 minutes (or a little longer until some of beans start to mush).
Add spinach and cook another 5 minutes.
To make this a quick and easy main dish, saute some sausage with the onions until no longer pink before adding chickpeas.
