BLT in a Jar

Ingredients:

  1. 1/2 - lemon - juice only
  2. 1 teaspoons - sugar
  3. 1 teaspoons - Tabasco
  4. 1 cups - chopped romaine
  5. 4 slices - butter brioche bread
  6. 1 pounds - applewood smoked bacon
  7. 1 - large white onion
  8. 1/4 cups - brown sugar
  9. 1/4 cups - garlic
  10. 1 teaspoons - cayenne pepper
  11. 1/4 teaspoons - cinnamon
  12. 1/4 teaspoons - nutmeg
  13. 1/2 cups - bourbon
  14. 1/4 cups - maple syrup
  15. 1 pints - cherry tomatoes
  16. 1 tablespoons - grapeseed oil
  17. - salt and white pepper to taste
  18. 1 - half sheet pan with rack
  19. 1/2 cups - mayonnaise
  20. 5 cloves - garlic pressed and pureed

Directions:

SLOW ROASTED TOMATOES:

1. Cut the tomatoes in half and separate on sheet pan. Lightly season with grapeseed oil, salt and pepper.

2. Roast in a 200 degree oven for 2-1/2 hours.

ASSEMBLY:

1. Take four nice pieces of butter brioche bread and spread bacon jam over bread.

2. Grill on side without jam.

3. Place bread on cookie sheet and bake in oven for 10 minutes.

4. After bread is done, cut into bite-sized pieces.

5. Take mini Mason jar and fill with bread and tomatoes; top with sauce and garnish.
