Black Eyed Peas

Ingredients:

  1. 1 pounds - black eyed peas
  2. 1 - Onion diced
  3. 6 pieces - Bacon chopped
  4. 1 1/2 teaspoons - salt
  5. 1 teaspoons - pepper
  6. 4 cloves - garlic minced
  7. 1 teaspoons - garlic powder
  8. 2/3 teaspoons - thyme
  9. 1/4 teaspoons - cayenne
  10. - Ham cooked and chopped
  11. 4 cups - chicken stock
  12. 2 cups - water
  13. 3 - bay leaves

Directions:

Bring beans to a boil, then let sit for 1 hour. (Per package usually)
Cook bacon and onion in soup pot. Add 2 coups of stock and all dry ingredients except the ham and bay leaves. Simmer to get any caramelization off the skillet (if any). Add beans, rest of stock, water, bay leaves and ham (to taste). Simmer for 1.5 hours.
