Ingredients:
- 1 - TBSP Olive Oil
- 1 - medium onion chopped
- 1 - medium bell pepper, chopped
- 5 stalks - of celery, chopped
- 2 cups - of chicken broth
- 1 - cup brown rice
- 4 - (14.5oz) cans black-eyed peas with liquid
- 1 - (14.5oz) can of Rotel
- 1 - (14.5oz) can diced tomatoes
- 2 cloves - garlic, finely chopped
Directions:
1. Heat the olive oil in a large saucepan over medium heat, and cook the onion, pepper, celery until tender. Pour in the chicken broth, mix in brown rice, black-eyed peas with liquid, can of Rotel tomatoes, diced tomatoes, and garlic. Bring to a boil, reduce heat to low, and simmer for 45 minutes, or until the rice is tender and cooked. Add water to the mixture if it becomes to thick.
2. After the rice is tender and the gumbo is done, add in the cooked, sliced sausage for a little bit of added flavor. Add some crumbled cornbread and you are ALL set!
