Black Bean Soup

Ingredients:

  1. 1/2 cups - Fresh cilantro chopped
  2. 1/2 cups - Shredded pepper jack cheese 2 oz
  3. - Avocado diced
  4. - Cooked chicken breast shredded
  5. - Sour cream (or sub plain Greek yogurt)
  6. 2 cloves - Garlic minced
  7. 2 teaspoons - Olive oil
  8. 3 cans - Black beans rinsed and drained
  9. 8 ounces - Salsa 1 jar
  10. 2 cups - Water
  11. 1/2 teaspoons - Chipotle chile powder
  12. 1 tablespoons - Lime juice

Directions:

1. In a large saucepan, heat olive oil and garlic over medium heat for about a minute, stirring occasionally, or until garlic becomes fragrant.
2. Before garlic begins to brown, add beans, salsa, chipotle chile powder and water. Bring to a boil, then reduce heat and simmer for 2 minutes.
3. Carefully place 3 cups black bean mixture in a blender or food processor and blend until smooth.
4. Add blended soup back to saucepan, along with lime juice. Simmer for 10 minutes.
5. Stir in chopped fresh cilantro.
6. Serve into bowls and sprinkle each serving with cheese and any other desired toppings.
