Ingredients:
- 1/3 cups - olive oil
- 1 1/4 teaspoons - garlic powder
- 1 loaves - (16 ounces) Italian or French bread cut into 1-inch slices
- 8 - plum tomatoes seeded and chopped
- 1/4 cups - chopped fresh basil
- 1/2 - a small red onion finely chopped
- 1/4 teaspoons - black pepper
- - Salt to taste
Directions:
Preheat the oven to 400 degree F.
In a large bowl, combine the oil and garlic powder; mix well and set aside 2 tablespoons of the mixture.
Brush the tops of the bread slices with the remaining oil mixture and place on a lightly greased baking sheet. Bake for 7 or 8 minutes, or until golden.
Meanwhile, in the same large bowl used earlier, combine the remaining ingredients with the reserved oil mixture. Spoon the tomato-onion mixture over the toasted bread slices and serve.
