Basil-Cheese Torte

Ingredients:

  1. 1 1/2 tablespoons - butter
  2. 2 cups - grated Parmesan
  3. 1/4 cups - dry bread crumbs
  4. 2 cups - (packed) basil leaves
  5. 1/2 cups - (packed) parsley
  6. 1/4 cups - olive oil
  7. 1 teaspoons - minced garlic
  8. 2 packages - (8 oz. ea.) cream cheese at room temperature
  9. 1 containers - ricotta cheese (15 oz.)
  10. 4 - large eggs
  11. 1/4 cups - chopped walnuts
  12. - basil leaves for garnish

Directions:

Line cookie sheet with foil. Use butter to grease bottom and sides of springform pan.

Mix 1/4 cup of Parmesan with bread crumbs; cover bottom and sides of pan. Refrigerate.

In blender, process basil, parsley and garlic into a paste. Scrape into large bowl.

Process cream cheese, ricotta and rest of Parmesan until smooth. Add eggs; process until smooth. Add basil mixture and blend.

Pour into chilled pan, and place on lined cookie sheet.

Bake for 1 hour and 15 minutes. Cool for 30 minutes in pan. Remove sides and cool in refrigerator.

Garnish with basil leaves.
