Ingredients:
- 4 tablespoons - butter (1/2 stick)
- 1/2 cups - brown sugar
- 3 - bananas
- 4 ounces - dark rum-Barbados Rum is delish
- dashes - ground cinnamon
- - vanilla ice cream

Directions:
Nice if you can "perform" this dish rather than prepare it....it is such a "wowza"!
Slice the bananas in to coin shapes.
Melt the butter and add the brown sugar to make a creamy paste.Let this mixture caramelize over the heat for a few minutes. Will start to appear foamy. Add the bananas and let soften. Get matches ready and act quickly, (this flame will not last long)..... then add the rum-which you pour in a path of circles onto the banana mixture.
This is where you will sprinkle the cinnamon into the flame causing orange sparks.
Use extreme caution when igniting alcohol. Remove the pan from the heat source before adding the alcohol. Pour the alcohol into the pan and carefully ignite with a match or click lighter. Return the pan to the heat and gently swirl to reduce the flames.
Have a cookie sheet ready to put on top of the skillet if the flame gets too large, although we have never had fire issues, proceed with caution! Add a few pinches of your cinnamon as soon as you have flame- "voodoo dust" or "magic dust" -the cinnamon will sparkle orange in the blue flame. It looks really neat. Serve over the scooped ice cream. Might need to double for a big family or a crowd.....
