Banana Cream Pie Parfaits

Ingredients:

  1. 2 cups - Vanilla Wafers Crushed
  2. 1/8 cups - White Sugar
  3. 6 tablespoons - Butter Melted
  4. 2 cups - Milk
  5. 3/4 cups - Heavy Cream
  6. 1/2 cups - Sugar
  7. 3 tablespoons - Cornstarch
  8. 2 tablespoons - All-Purpose Flour
  9. 1/4 teaspoons - Kosher Salt
  10. 5 - Large Egg Yolks
  11. 1/4 cups - Unsalted Butter Cut Into 1/2 inch Cubes
  12. 1 - Vanilla Bean Seeds Removed
  13. 1 cups - Heavy Cream
  14. 1/4 cups - Powdered Sugar
  15. 2 - Ripe Bananas
  16. 2 cups - Vanilla Wafers Crushed
  17. 1/8 cups - White Sugar
  18. 6 tablespoons - Butter Melted
  19. 2 cups - Milk
  20. 3/4 cups - Heavy Cream
  21. 1/2 cups - Sugar
  22. 3 tablespoons - Cornstarch
  23. 2 tablespoons - All-Purpose Flour
  24. 1/4 teaspoons - Kosher Salt
  25. 5 - Large Egg Yolks
  26. 1/4 cups - Unsalted Butter Cut Into 1/2 inch Cubes
  27. 1 - Vanilla Bean Seeds Removed
  28. 1 cups - Heavy Cream
  29. 1/4 cups - Powdered Sugar
  30. 2 - Ripe Bananas

Directions:

Place the vanilla wafers and sugar in a food processor. Pulse to break the wafers up and then process for 1-2 minutes until the crackers are the same consistency as the sugar. Add the melted butter and pulse to combine. Remove the mixture from the food processor and transfer to a baking sheet. Heat oven to 375 degrees. Bake the crumbles for about 10 minutes. Remove from the oven and let cool.

Bring milk and cream to a simmer in a medium saucepan. Whisk, sugar, cornstarch, flour, and salt in a large mixing bowl. Add the egg yolk to the sugar mixture and whisk until smooth but very thick. While whisking, gradually add the warm milk mixture to the yolk mixture. Once teh 2 mixtures are fully combined, return everything back to the saucepan and cook over medium-low heat, whisking constantly until thick, about 2-3 minutes. Add the butter and vanilla and stir until the butter has melted. Transfer everything to a medium bowl; press plastic wrap directly onto surface of pastry cream. Chill until set.

Using an electric mixer or whisk, beat heavy cream and powdered sugar until medium-stiff peaks form. Cover and chill.

Arrange 8 small glasses on a clean surface. Layer in the pudding, whipped cream, sliced bananas and crumbled wafer mixture. Serve with a dollop of extra whipped cream.
