Ingredients:
- 2 1/2 pounds - to 3 pounds fresh pork strip tenderloin
- 1/4 cups - soy sauce
- 1/4 cups - bourbon
- 2 tablespoons - brown sugar
- 1/3 cups - sour cream
- 1/3 cups - mayonnaise
- 1 tablespoons - dry mustard
- 1 tablespoons - finely chopped scallions
- 1 1/2 teaspoons - vinegar
- - salt to taste
Directions:
Combine marinade ingredients. Marinate meat several hours at room temperature, turning occasionally.
Remove from marinade and bake in slow oven at 325 degrees F, basting frequently with marinade for 1 hour or until tender.
Carve the tenderloin on the diagonal in thin slices and serve it with mustard sauce.
Mustard Sauce:
Mix together sour cream and mayonnaise; stir in remaining sauce ingredients.
