Since you won't be able to buy much less than a pound of beef, make a triple batch in a big Dutch oven. This freezes well, and you'll have a quick meal ready to go. You could also use this mixture to make lasagna.

Number of Servings:

Ingredients:

  1. 16 ounces - ziti or similar size pasta, like spirals or bowtie
  2. 1/3 pounds - lean ground beef
  3. 2 cloves - garlic minced, or dry equivalent
  4. 1 teaspoons - dried oregano
  5. 1 teaspoons - dried thyme
  6. 1 teaspoons - dried rosemary
  7. 1/2 teaspoons - salt
  8. 1/2 teaspoons - black pepper
  9. 28 ounces - canned crushed tomatoes
  10. 1 cups - mozzarella cheese shredded, use more if you like

Directions:

Preheat oven to 350 degrees. Grease 4 quart casserole dish or 9x9 baking pan.

Cook pasta according to package directions and set aside.

Heat large skillet on med-high heat and cook beef and garlic till beef is browned, breaking up the beef as it cooks. Drain off any excess fat and return to med heat. Add herbs, salt and pepper; stir to coat beef. Cook till herbs are fragrant, about 2 minutes. Add tomatoes, bring to a boil, reduce heat and simmer 5 minutes.

Spoon a small amount of the beef mixture into bottom of baking dish and top with half the ziti. Then layer half the beef mixture and half the cheese. Layer with remaining ziti, then top with the beef mixture and cheese. Cover with foil and bake 30 minutes. Remove foil and cook until cheese is golden and bubbly, about 15-20 minutes more.
