Bacon Beer Cheese Soup

Ingredients:

  1. 1/2 pounds - Bacon
  2. 1 - Large Onion Diced
  3. 2 cloves - Garlic Minced
  4. 1/3 cups - All-Purpose Flour
  5. 2 cups - Chicken Stock
  6. 1 cups - Whole Milk
  7. 8 ounces - Lager
  8. 4 cups - Cheddar Cheese Shredded
  9. - Kosher Salt
  10. - Ground Black Pepper
  11. 1/2 pounds - Bacon
  12. 1 - Large Onion Diced
  13. 2 cloves - Garlic Minced
  14. 1/3 cups - All-Purpose Flour
  15. 2 cups - Chicken Stock
  16. 1 cups - Whole Milk
  17. 8 ounces - Lager
  18. 4 cups - Cheddar Cheese Shredded
  19. - Kosher Salt
  20. - Ground Black Pepper

Directions:

In a large skillet over medium heat, cook bacon until crisp. Transfer to a paper lined plate to let drain, then crumble.

Heat skillet with bacon fat over medium heat. Add onion and cook until soft, 6 minutes, then add garlic and cook until fragrant, 1 minute. Add flour and whisk until golden, 3 minutes, then add stock, milk and beer and let simmer until thickened, 15-20 minutes.

Add cheese and continue to simmer until slightly reduced and thickened, stirring occasionally, 5-8 minutes. Season generously with salt and pepper, then stir in most of the crumbled bacon.

Ladle soup into bowls and top with remaining bacon. Serve with crusty bread for dipping.
