Ingredients:

  1. 3 quarts - granny smith apples julienned, dipped in diluted pineapple juice
  2. 3 1/4 cups - dried cranberries
  3. 2 cups - shallot finely minced
  4. 2 cups - fresh Italian-leaf parsley finely chopped
  5. 1/2 cups - Dijon mustard
  6. 2 teaspoons - sea salt and freshly cracked black pepper
  7. 1/2 cups - sugar
  8. 5 1/3 cups - extra virgin olive oil
  9. 1 cups - white balsamic vinegar
  10. 12 1/2 pounds - baby spring mix
  11. 1 1/2 cups - crushed pistachio nuts
  12. 12 ounces - goat cheese semi-soft

Directions:

FOR VINAIGRETTE:

1. Blend all ingredients except oil for 20 seconds. Drizzle in oil slowly until emulsion is formed. Refrigerate for 4 hours before use.* Makes 12 cups (100 servings plus extra dressing for each table).

2. Serving: Use 6 1/4 cups of Vinaigrette for the 100 servings of salad.

* 1 Tablespoon per person, with small bowl of extra dressing per table. Remaining vinaigrette may be stored in refrigerator for up to one month.*

FOR SALAD:

1. Cut cheese log in half. Roll each log to 1/2-inch diameter and roll in crushed pistachios; chill 'til firm. Cut into 1/8-inch slices; place one slice per salad.

2. In medium bowl combine spring mix, apples, and cranberries. Toss with 6-1/4 cups White Balsamic Vinaigrette (1 Tablespoon per serving); toss well.

3. Serving: Use tongs to plate 2 cups of spring mix per person; top each salad with one goat cheese "coin" and sever.
