Number of Servings:

  1. 1/2 cups - creamy peanut butter
  2. 1/2 cups - water
  3. 1/4 cups - soy sauce
  4. 4 cloves - garlic, minced
  5. 3 tablespoons - lemon juice
  6. 2 tablespoons - brown sugar
  7. 3/4 teaspoons - ground ginger
  8. 1/2 teaspoons - crushed red pepper flakes
  9. 4 - boneless, skinless chicken breast halves
  10. 2 cups - shredded red cabbage
  11. - sliced green onion tops, for garnish

In a saucepan, combine the first eight ingredients; cook and stir over medium-high heat for 5 minutes or until smooth. Reserve half of the sauce.

Slice chicken lengthwise into 1-inch strips; thread onto skewers (if using bamboo skewers, soak them in water for at least 20 minutes before using).

Grill, uncovered, over medium-hot coals for 2 minutes; turn and brush with peanut butter sauce. Continue turning and basting for 4-6 minutes or until juices run clear.

Place cabbage on a serving plate; top with chicken. Sprinkle with onion tops. Serve with reserved sauce.
