Asian Peanut Beef

Ingredients:

  1. 1/2 pounds - spaghetti, broken in half, uncooked 8 oz bag
  2. 1 cups - sugar snap peas
  3. 1 cups - red pepper strips
  4. 1/2 cups - light catalina dressing
  5. 1 pounds - well-trimmed boneless beef sirloin steak, cut into thin strips
  6. 2 tablespoons - peanut butter
  7. 2 tablespoons - lite soy sauce
  8. 4 - green onions, sliced
  9. 1/2 cups - dry roasted peanuts, chopped

Directions:

COOK spaghetti as directed on package, adding snap peas and red pepper to the cooking water for the last 2 minutes of the spaghetti cook time.

MEANWHILE, heat dressing in large skillet on medium-high heat. Add meat; stir fry 1 minute or until sauce thickens.

DRAIN spaghetti and vegetables. Add to skillet; toss with meat mixture. Stir in green onion; sprinkle with peanuts.
