Ingredients:
- 1/4 cups - apricot jam
- 1/2 teaspoons - pure vanilla extract
- 1 - large apple (such as Cosmic Crisp) peeled, cored, cut into 1/4-inch pieces
- 1/2 cups - cranberries thawed if frozen
- 1/4 cups - sugar plus more for sprinkling
- 1/4 teaspoons - ground cinnamon
- 4 - refrigerated rolled pie crusts (OR 4 homemade pie crusts)
- - 3-1/2 inch apple shaped cookie cutter optional
- 1 - large egg beaten
Directions:
Heat oven to 425° F. In a large bowl, whisk together jam and vanilla. Add apple and cranberries, sprinkle with sugar and cinnamon and toss to combine.
Working between two pieces of parchment paper, roll each crust to 1/8-inch thickness. Using cookie cutter, cut out 8 apples from each pie crust.
Place half of cutouts on 2 parchment-lined baking sheets.
Divide apple mixture among cutouts on prepared sheets (about 2 heaping tablespoons on each crust), placing filling directly in center of each cutout.
Lightly brush borders with beaten egg. If desired, using a small knife, cut small slits or shapes in remaining cutouts. Top filling with scored apple cutouts and press edges together to seal (sometimes using fork tines to do this process is a great way to seal edges well).
Brush tops of hand pies with remaining egg, sprinkle with a little sugar, and bake until golden brown, about 12 to 15 minutes.
