Apple Cherry Crisp

Ingredients:

  1. 5 1/2 cups - chopped cored cooking apples
  2. 1/2 cups - unsweetened dried cherries
  3. 1 cups - packed brown sugar
  4. 1/2 teaspoons - ground cinnamon
  5. 1 cups - regular rolled oats
  6. 1/4 cups - all-purpose flour
  7. 1/2 cups - cold butter cut up
  8. 1/2 cups - chopped almonds
  9. 1 tablespoons - instant coffee crystals
  10. 1 tablespoons - sugar
  11. 1 tablespoons - boiling water
  12. - sweetened whipped cream
  13. - caramel sauce optional

Directions:

Preheat oven to 350 degrees F. Place six 10-to-12-oz. ovenproof mugs on a rimmed baking sheet.

Stir together apples, cherries, 1/4 cup of the brown sugar, and the cinnamon in a bowl. Spoon into mugs.

In another bowl, stir together oats, the remaining 3/4 cup brown sugar, and the flour. Cut in butter until mixture resembles coarse crumbs. Stir in almonds. Divide among mugs.

Bake 40 minutes or until topping is golden and fruit is bubbly. Let stand 20 minutes before serving.

For dalgona topping, in a small bowl stir together instant coffee, sugar and boiling water. Beat with a mixer on high until light in color and soft peaks form (tips curl). Spoon onto crisps with a spoonful of whipped cream and swirl together.

If desired, drizzle with caramel sauce.
